2 racks St Louis Style Ribs

Wilson & Sons Spice3 Rub

Wilson & Sons Barbecue Sauce

Directions

1. Peel the silver skin membrane off the back side of the ribs.  Use a butter knife to get it started.

2. Sprinkle the Spice Rub generously on both sides of the ribs

3. Wrap in plastic and marinate 24 hours in the refrigerator

4. Smoke or bake the ribs "naked" for 3 hours at 220 degrees

5. Spritz with apple juice/cider every hour

6. At 3 hours pull them off, make a large envelope of aluminum foil around the ribs, pour apple juice into the foil, and seal the edges

7. Place them back in the oven or smoker for 4 hours at 220 degrees

(If adding sauce, open the foil at 3 hours and coat them with sauce.  Leave the foil open and bake for an additional hour)

8. At 4 hours pull them off and let them sit 30 minutes before opening the foil
